In 1987, Fleming and Britton Pfann bought a 300-acre farm in Siler City, a town about halfway between Pittsboro and Asheboro in central North Carolina. They got a few goats to clear the overgrown brush; one of them was in milk. Fleming, who is lactose-intolerant, could drink the goat’s milk. As the herd grew, their interest in cheese deepened, and finally culminated in 1991 in the creation of a new dairy. With a strong desire to create excellent products, the Pfanns committed themselves to learning about herd nutrition and health, dairy equipment, maintenance, hygiene, and sanitation. Equally important, they studied how milk changes from season to season and how to adjust techniques to best express its characteristics. Beyond celebrating the farm’s unique locale, its terroir, they only sell cheese within the immediate region, thus contributing to a vibrant local agricultural economy and culture.
